Definition
A peptide bond is formed when the amine group of one amino acid reacts with the carboxyl group of another, releasing a water molecule in the process. The resulting C-N bond has partial double-bond character and is remarkably stable. Multiple peptide bonds chain amino acids into peptides and proteins; breaking them is how digestive enzymes deconstruct dietary protein and, unfortunately, orally dosed peptides.
